I think you've already received an answer for this in another newsgroup? If
not, post back and someone more knowledgeable about Word 2007 than I can
help. One thing I can tell you is that if you select the text you want to
add and press Alt+F3, you'll get the familiar dialog that allows you to name
and add the entry. It will be saved in whatever template is currently
selected as the default for AutoText entries in the AutoText dialog (if
there still is such an entity).

The "Save Selection to <gallery name> gallery" is found at the bottom of
most Building Block galleries. If the entry then the Save Selection command
is found on the Insert tab under Quick Parts.
The default template in the Create New Building Block dialog box is Building
Blocks.dotx but unlike previous versions it's easy to change the Save in
template and change it later if necessary. (The only thing that is lacking
is the ability to move Building Blocks between templates en mass - the
Organizer no longer has a tab for AutoText/Building Blocks.)
If you are interested in a some screen shots and more detail (along with how
to create new Building Blocks), here's an excerpt from a chapter I wrote on
